Pork Butt Cabaret is an intimate New Orleans tour and food tasting experience celebrating the glorious marriage of pork, smoke, spice, music, and Louisiana excess. Part dinner party, part culinary storytelling, and part live music cabaret, the evening unfolds course by course with plenty of local flavor, laughter, and a little mischief along the way.

Gather around the table as we explore Louisiana’s obsession with the pig—from roadside cracklin’ and Cajun sausage to slow-roasted cochon de lait and sticky ribs. Each course tells a piece of the story of South Louisiana cooking, where Cajun country traditions, Creole kitchens, backyard cookouts, and old-fashioned ingenuity all meet on the plate.

And because no Louisiana gathering is complete without music, the evening features live local musicians, bringing the sounds of New Orleans and South Louisiana right into the supper club. Between courses, the music, stories, and food come together to create the feeling of being invited to a very special—and a little bit country—Louisiana dinner party.

The Supper

Louisiana Pork Cracklin’
Crispy, salty, and unmistakably Louisiana, our pork cracklin’ starts the evening with one of Cajun country’s most beloved treats.

Alligator & Pork Sausage
Smoky Louisiana sausage bringing together alligator and pork, seasoned with plenty of spice and served as its own taste of the bayou.

Cochon de Lait & Cheese Grits
Tender, slow-roasted pork inspired by Louisiana’s traditional whole-hog cochon de lait celebrations, served over rich, creamy cheese grits.

Pork Ribs & Maque Choux
Brined, roasted and then grilled pork ribs paired with maque choux, Louisiana’s beloved corn dish with deep Creole and Native American roots.

Steen’s Bacon & Creole Cream Cheese
For dessert, sweet meets salty: smoky bacon glazed with Louisiana cane syrup and served with tangy Creole cream cheese—a decidedly Louisiana finish.

Restrictions

Not suitable for folks who don't eat pork. This is a celebration of pork and there are no menu substitutions.
